Easy Raspberry & Lemon Cheesecake

If you’re looking for a delicious, easy-to-make, healthy dessert for Christmas (or any special occasion) you can’t go wrong with this recipe.
This no-bake cheesecake is silky smooth, full of flavour and looks sensational.
Cheesecake lovers – prepare to be impressed!
When I made the cake in this photo I used our Easy Keto Lemon Cheesecake recipe and increased the ingredients by 50% and also added a punnet of fresh raspberries (frozen would be fine too). If you follow the standard recipe quantities (which makes a shallower cheesecake) and add the same amount of raspberries it will be a slightly brighter pink (with a stronger raspberry flavour). Or you could use strawberries or blueberries for a flavour variation.
And if you are wondering about the fruit salad in the background of the picture above – it couldn’t be easier. Fresh pineapple and strawberries with a tablespoon or two of Malabu (coconut rum) poured over and left to marinade for a few hours before serving. Yum!
